Ham Chipotle Dressing

INGREDIENTS:

2 - 6 oz bags Mrs. Cubbison's Dressing
1 lb Baked ham, diced
1 cup Butter
1 cup Stock or broth (chicken or turkey)
1 cup Apple cider vinegar
1/3 cup Brown sugar
1 tsp Cinnamon 2 Cloves
1 tsp Coriander seeds
1 Bay leaf
1 cup White onion, diced
1 cup Celery, diced
1 Granny Smith apple, peeled, cored, and diced
1 cup Walnuts, chopped
1 cup Raisins
1 cup Cranberries, dried
1 Tbsp Chipotle chiles, minced (canned in adobo)
Salt and white pepper

PROCEDURE:

1. Add spices (cinnamon, clove, coriander seeds, dry mustard, bay leaf), and brown sugar to apple cider vinegar.
2. Add chicken or turkey stock to apple cider vinegar and season.
3. Lightly saute onions, and celery in butter. Add ham and apples and continue to saute. Then add walnuts, and chipotle chile (you can add more chipotle if a hotter dressing is desired), raisins, and dried cranberries and finish sauteing. Remove from heat.
4. Mix Mrs. Cubbison's dressing with sauted items.
5. Pass reduced apple cider and stock through sieve and add to mixture. Mix lightly. Texture may be varied by using more or less liquid. Season additionally to taste.
6. Spoon dressing into a baking dish and cover.
7. Bake for 40-45 minutes. Uncover the last 10 to 15 minutes for a crisper top. Yield: 12-14 servings
