1 box Mrs. Cubbison's Dressing Mix 1 # Spicy Italian Sausage 6 oz. Red Bell Pepper Diced 6 oz. Green Bell Pepper Diced 6 oz. minced onion 1 small shallot diced 1 tsp ground sage 1 tsp thyme 1 tsp sweet basil 1 tsp oregano 6 oz chopped celery 4 oz mushrooms 4 oz of white wine 4 oz chicken/beef stock 6 oz butter Procedure: In a sauce pot, begin cooking the sausage until lightly brown, add the onions and celery, cook for two minutes over moderate heat. Add the green and red bell peppers and mushrooms, cook for an extra 1 minute. Add the melted butter. Add all spices. Add the wine and the stock, and reduce by 1/4. Turn off heat, remove, add the Mrs.Cubbisons bread crumbs. Blend all ingredients and pour into casserole and bake for 20 or 30 minutes in 375 degrees oven. |
