Marvelous Meatloaf Meals
If you have always asked for Mom's or Grandma's meatloaf
recipe, just imagine if next time they are begging for yours.
It's amazing that starting with Mrs. Cubbison's Old-Fashioned
Meatloaf Mix, you can have such a hearty homemade flavor without
a single chop, dice or slice. The following tasty seven recipes
make our point with pizzazz!
Start with meatloaf mix and 1 lb. any kind of ground meat or ground meat mixture.

BLUE CORN TAMALE MEATLOAF
Before shaping into a loaf, add: 3/4 cup crumbled blue corn
tortilla chips 1/2 cup canned corn kernels, drained, or frozen
corn kernals, thawed, and 1/4 cup salsa.

TEXAS CHILI MEATLOAF
Use 1/4 cup less water than called for by meatloaf mix. When
shaping into a loaf, substitute 1/2 cup of canned chili for
1/4 cup of the ground meat. 3 minutes before meatloaf is done
cooking, sprinkle with 1/4 cup shredded Cheddar cheese.

MINESTRONE MEATLOAF
Use 1/4 cup less water than called for by meatloaf mix.
When shaping into a loaf, add 3/4 cup canned minestrone
soup and use 1/4 cup less ground meat than called for. 3 minutes
before meatloaf is done cooking, sprinkle with 1/4 cup
freshly grated Parmesan cheese or mozzarella cheese or 2
tablespoons packaged grated Parmesan cheese.

LASAGNA MEATLOAF
Cook three strips lasagna noodles according to package in-
structions. When cool, rip into 1 inch pieces. Before shap-
ing meat into a loaf, add lasagna noodle pieces and 1/2 cup
ricotta cheese. Just before serving: Top with heated spaghetti sauce.

MACARONI 'n CHEESE MEATLOAF
Prepare macaroni 'n cheese according to package instructions.
When shaping meatloaf, stuff middle with
1/4 to 1/2 of the macaroni 'n cheese (serve the rest on the
side). Just before serving, melt 1/2 cup processed cheese
and serve atop meatloaf.

BEEF BOURGUIGNONNE MEATLOAF
Substitute 1/4 cup Fetzer red wine for 1/4 cup water called for by
mix. When shaping loaf, add 3/4 cup canned mushrooms,
drained.

FRANKS 'n BEANS MEATLOAF
Cook 2 frankfurters according to package instructions.
When cool, cut into 1/4 inch slices. Use 1/8 cup less water
than the mix calls for. When shaping loaf, add frankfurter slices
and 1/2 cup canned baked beans.

Pork Pie with Apples and Potatoes Recipe
INGREDIENTS:
1 package ground pork
1 envelope Mrs. Cubbison's Meatloaf Mix
1/2 cup water
1/2 Granny Smith Apple, fine dice
1 small waxy potato (like Yukon Gold or red potato), fine diced and blanched
1 box puff pastry sheets, thawed
DIRECTIONS:
Preheat oven to 400 degrees F. Mix the pork, meatloaf mix, water, apple,
and potato. Cut the puff pastry into 3-4 inch squares. Spray a muffin tin
with cooking spray and line with the puff pastry. Fill the shells with the meat
mixture 3/4 full. Bake, on the middle rack, in the oven for 25 minutes.
Notes: This recipe is great as a breakfast entree or an appetizer.
Serve with a side of apple sauce or garnish with mustard. We used Morehouse
Mustard.
