Pesto Chicken Salad

2 each; (6 oz) chicken breast

1/2 cup; Italian dressing

6 cups; Italian blend, mixed greens

1/2 cup; grape tomatoes, halved

8 each; fresh mozzarella baby bocconcini

1/2 cup; basil pesto vinaigrette

1/2 cup; Mrs. Cubbison's Asiago Cheese Ciabatta Croutons


  • Marinate chicken in Italian dressing for two hours; remove from marinade. Grill until internal temperature of chicken reaches 165°F; slice into 1/4" pieces.
  • Mix greens, tomato, mozzarella, and chicken with vinaigrette until well coated.
  • Remove to serving plate; top salad with Asiago Cheese Ciabatta croutons.
