Tuscan Chicken Salad

2 each; (6 oz) chicken breast

1/2 cup; Italian dressing

6 cups; Italian mixed greens

1/4 cup; tomato, 1/2" dice

1/4 cup; red onion, 1/2" dice

2 tablespoons; bacon, cooked, 1/2" pieces

2 tablespoons; black olive, sliced

1/2 cup; balsamic vinaigrette

1 tablespoon; Bleu cheese crumbles

1/2 cup; Mrs. Cubbison's Garlic & Butter Focaccia Croutons


  • Marinate chicken in Italian dressing for two hours; remove from marinade. Grill until internal temperature of chicken reaches 165°F; slice into 1/4" pieces.
  • Mix greens, tomato, onion, bacon, olives, and sliced chicken with dressing until well coated.
  • Remove to serving plate; top with cheese and croutons.
