Sweet Corn Relish Salad

2 cups; fresh or frozen corn

3 each; medium tomatoes, seeded and chopped

5 ounces; green leaf lettuce

1 each; medium green pepper, diced

1/2 cup; chopped red onion

1/2 cup; sliced celery

1 (6.5 ounce) jar; marinated artichoke hearts, undrained

1/4 cup; reduced-fat Italian salad dressing

5 leaves; fresh basil, finely chopped

1/2 teaspoon; garlic powder

1/2 teaspoon; dried oregano

1/4 teaspoon; lemon pepper seasoning

  • In a large bowl, combine the first six ingredients.
  • In another bowl, combine the artichoke, salad dressing, basil, garlic powder, oregano, lemon pepper, and Texas Toast Croutons.
  • Add to corn mixture and toss gently.
  • Cover and refrigerate for at least 6 hours before serving.
