In a 2-quart microwave casserole dish, combine butter or margarine, vegetables, water and bouillon. Cover and heat on HIGH (100% power) 4 minutes, until boiling. Stir in dressing mix and parsley. Cover and let stand 5 minutes. Return to microwave and heat on HIGH (100% power) 1 minute. Fluff with a fork to serve. Makes 6 (1/2 cup) servings.
