Festive Fig and Bacon Stuffing

Ingredients

1/4 cup; butter or margarine

1 cup; chopped onion

1 cup; chopped celery

3 medium Granny Smith apples, peeled, cored, and chopped

1 cup; chopped dried figs

1/2 cup; finely chopped fresh parsley

1 box (12 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing

4 ounces; bacon, diced and cooked crisp

2 cup; chicken broth

Directions

  1. Preheat the oven to 350°F. Liberally grease a 2 1/2- to 3-quart casserole dish and set aside.
  2. Place the butter or margarine in a medium-sized skillet, and melt over medium heat. Add the onion and celery and sauté for 5 minutes, or until soft. Stir in the apples, figs, and parsley.
  3. Combine the stuffing mix and bacon in a large bowl. Pour the apple mixture over the stuffing mix, add the chicken broth, and stir to combine well.
  4. Transfer the stuffing to the prepared casserole dish and cover. Bake on middle rack of preheated 350°F oven for 30 to 40 minutes until internal temperature reaches 165°F.
  5. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
