Pepper and Mushroom Stuffing

Ingredients

2 tablespoons; extra virgin olive oil

1 cup; chopped, fresh celery

1/2 cup; chopped, fresh onion

1/2 cup; finely chopped, fresh green pepper [about 1/2 medium pepper]

1/4 cup; finely chopped, fresh red pepper [about 1/2 medium pepper]

1 (10 ounce) can mushrooms, drained

1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1 1/2 cups; plain water

Directions

  1. Heat oil in a medium to large pot over medium-low heat on the top of the stove and sauté all fresh vegetables in oil until tender.
  2. Add canned, drained mushrooms and stir. Add Mrs. Cubbison's Traditional Seasoned Stuffing and water, stir well, turn off burner, cover and allow to sit for five minutes.
  3. Preheat oven to 375°F and prepare a two quart baking dish with cooking oil spray.
  4. Fluff the stuffing, spoon into the prepared baking dish. Bake uncovered on middle rack of preheated 375°F oven for 15-20 minutes until internal temperature reaches 165°F and the top is golden brown.
  5. Remove from oven, cover with foil and keep warm until serving.
